# Gluten Escape

> A directory of resorts, hotels and wellness retreats sorted by how safe their kitchens really are for travelers with celiac disease, with prices, locations and the date every listing was last checked.

Every property is sorted into one of three kitchen safety tiers:

- Tier 1 (100% Dedicated Facility): No gluten anywhere on the property. Wheat, barley and rye never enter the kitchen.
- Tier 2 (Dedicated Separate Kitchen): Gluten is served on site, but gluten-free food comes from a physically separate kitchen with its own ovens, fryers and cookware.
- Tier 3 (Verified Celiac Protocol): A shared kitchen that runs checked cross-contact rules: separate prep stations, dedicated fryers and toasters, and trained chefs.

Each audit page states when it was last checked and whether the property confirmed the details in writing.
